Salsarific!

I made salsa the week before school started with all the bounties of our garden. The only thing we didn't grow was the onion and cilantro. It ended up making 16 pints!

Ready to begin cutting.(note the lone squash!) This is one week's worth of tomatoes. I had to line them up on the dining room window sill as well as the kitchen's.
Ready to cook.
The cooking begun.

Julie,

That salsa looks great! Do you have recipes that you use salsa with or just eat it with chips....can you tell I'm looking for meal ideas - we all like salsa. Hope that school is going well - ttyl

Love salsa how ever- Iwould probably eat a bowl of it for my vegetable at supper!=) We maily eat it on chips or tacos or taco salad but one good recipe is Beef Tortilla Skillet (or something like that.)

Beef Tortilla Skillet
Hamburger (1/2 lb.?)

Peppers-we like a lot but do as you please. Then brown it well. While it is browning tear 6-8 flour tortillas into small pieces. (size of an egg-but not necessarily round!) Once brown add 1 can tomato soup, 1 can water, 1/2 cup salsa and torn tortillas. Cook until the tortillas absorb the water. Top with cheese. I love the way the tortillas get all soft and gooey.
